Product information

The Oosterschelde lobster is considered the most refined lobster species and is highly prized by Michelin-starred chefs. The Oosterschelde lobster is related to the European lobster and shares the beautiful blue color, although the Oosterschelde lobster is often slightly darker in shade. The product is supplied in the same grades as the European variety. Due to local catching, this lobster has a small ecological footprint and guarantees exceptionally high quality.

As the name suggests, this lobster is found primarily in the Oosterschelde, but it is also caught in the Grevelingenmeer. Because the lobster is sourced locally from our own waters, the journey to the kitchen remains short and freshness optimal.

Other information

The Oosterschelde lobster is a true seasonal product. The catch starts annually on the third Thursday of March and continues until mid-July. During this short period, a total of approximately 30,000 kg of lobster is caught. This strict season distinguishes the Oosterschelde lobster from the European lobster, which is available all year round.
