Product information

The Canadian Canner is a lobster known for its softer and sweeter meat, typically containing a relatively large amount of meat. The lobsters usually weigh between 300 and 400 grams each. Although the name suggests otherwise, they are no longer as small as they used to be, as the minimum size for carapace length is increased every year. Canners are very popular with restaurateurs, as they lend themselves perfectly to an attractive menu featuring a whole lobster.

These lobsters are caught in only 6 of the 41 available fishing grounds in Canada. The name “Canner” originates from the past, when these lobsters were primarily processed in factories called “canneries.” Here, the product was historically mainly canned or cooked whole and frozen as so-called 'popsicle' lobsters.

Other information

The Canner is a true seasonal product with a short fishing season. Provided sufficient stock is built up to bridge fishing breaks, they are available between May and September. However, in the event of a shortage, there is a risk of interruptions in availability around mid-July or early August. Offering a small, whole lobster on the menu is a tradition that always works well with the public, especially in Belgian gastronomy.
