Product information
The Canadian lobster is a wild-caught product ranging in size from 400 grams to 1.5 kg. A characteristic of the lobster is its exoskeleton, an external shell that protects the animal and changes during various growth phases. Lobsters are very sensitive to stress; at excessive stress levels caused by temperature fluctuations or oxygen deficiency, the digestive process begins in the claws, which affects the amount of meat. To ensure quality, all our lobsters are purged in our own tanks to clean them internally.

Origin
We import these highest quality lobsters from the waters around Nova Scotia in Canada. Here, they are caught sustainably using traps. To maintain the population, a strict system is in place: females carrying eggs have their tails cut so that other fishermen know these specimens must be returned immediately.
Other information
The Canadian lobster is available year-round, unlike the Canadian canner (baby lobster), which is only available for a short season from May to September. A lobster's growth is influenced by water temperature; under ideal conditions, a young specimen grows up to 100 grams per year, a rate that gradually decreases after five years.
