Product information
The Fine de Mystique is an oyster with a light shell and soft, grey-speckled flesh. The oysters have a firm texture and a pure taste described as refined: slightly iodine and subtly nutty. Grown in deep waters and strong currents, this is an elegant oyster that is highly prized by connoisseurs.
Origin
This oyster is cultivated along the west coast of Normandy, in the vicinity of Agon-Coutainville and Blainville-sur-Mer. The area is known for the largest tidal differences in Europe, sometimes reaching up to 15 meters. Every cycle of ebb and flow gives the oysters exactly what they need to grow to their characteristic finesse.
Other information
The oysters are cultivated for three years in iron bags on tables in the sea. At low tide, these tables become completely exposed. This is the moment when the growers, often under challenging conditions with high waves and rough winds, provide care for the oysters.
