Vongole and Palourdes are both carpet shells. This is the Dutch collective name for this shell. They are exactly the same shell, where the size determines the difference in naming: Vongole is the smaller size and Palourdes is the larger size. Vongola Veraci is the Italian name for these carpet shells, while Palourdes is the French name. We offer these shellfish both wild-caught and farmed.

Origin
90% of our Vongoles and Palourdes come from Canada and the United States. The remaining 10% are English or French clams. We deliberately choose these specific regions because of the colder water, which results in higher quality clams. In colder water, the animals grow more slowly, giving them more time to fatten up and become beautifully plump. We avoid countries such as Italy and Portugal due to the warm water, warm weather, and the resulting lower quality.
Other information
To guarantee top quality, all our Vongole are carefully purified in pure Oosterschelde water in our own basins upon arrival. In addition, the shellfish carry sustainability labels based on their catching or farming method. The wild-caught Vongole from the United Kingdom is MSC certified, and the farmed varieties from America are ASC certified.
