
Oysters from Zeeland
The Zeeland table oyster is briny, robust, and firm in flavor, with the characteristic salty taste of the Oosterschelde. These oysters are first cultivated on tables so that they can grow to adult size off the seabed. As soon as they are large enough, we move them to our most nutrient-rich plots, where they can continue to grow on the seabed. The cultivation process from seed to adult oyster takes approximately three years. We cultivate all our Zeeland table oysters in the protected nature reserve of the Oosterschelde.
Our flat oysters also come from Zeeland. Compared to the creuses, these oysters have a long cultivation process. For instance, cultivating a 4/0 takes approximately 5 years! This oyster has a distinct, firm, metallic, and peppery flavor. The oyster is round and flat and easy to shuck. It is available in various sizes and grades.
Whether you choose a Wadden oyster, Fine de Mystique, Irish Gold, or a Zeeland oyster, there is a suitable oyster for every dish and every taste.
Distilling in our own basins
Before they leave our premises, we allow them to mature in our pure Oosterschelde water basins at De Meulemeester. This ensures extra freshness and purity.
The result is a fresh oyster with subtle sweet notes, available all year round and perfectly suited for both refined dishes and a pure, classic oyster moment.
