Digestion in private basins in Zeeland
At De Meulemeester, all our lobsters, crabs, langoustines, and spiny lobsters are carefully purged of their water. On-site and in our own tanks in Zeeland.
Lobsters from Nova Scotia, Canada, are seasoned immediately after being caught, spending 5 to 6 days in seawater to make them as clean as possible and remove impurities. Once they arrive at our facility, we allow the animals to rest again in our own tanks, where we continuously monitor their condition. Only the strongest animals remain in the tank; the weaker ones are carefully separated and processed for meal preparations or as frozen soup lobster. Through this selection, we guarantee that only the very best quality reaches the customer, while simultaneously preventing waste of these magnificent seafood products.
Crabs are caught in the Wadden Sea, Scotland, or Ireland. In the Wadden Sea, we work with a skipper who supplies us exclusively. We buy lobsters directly from fishermen in Brittany; we do this exclusively in Brittany because the water temperature there is perfect for keeping and purging them in our systems.
Our langoustines come from our partners in Northern Norway. This product is special because there are very few people who have the knowledge to keep langoustines alive. With the help of our partners in Norway, we have succeeded in keeping them perfectly alive in our systems.
